METHOD

  • Step 1Preheat oven to 220°C/200°C fan forced. Grease a large baking tray. Place the cauliflower florets in a large microwave-safe bowl. Partially cover and microwave on High for 8 minutes or until tender-crisp. Add the oil, taco seasoning and paprika.   • Step 2Spread three-quarters of the tortilla strips over prepared tray. Top with cauliflower mixture. Push remaining tortilla strips into cauliflower mixture. Scatter with the cheddar. Bake for 8 minutes or until cheese melts.
  • Step 3Meanwhile, combine the tomato, red onion and vinegar in a small bowl. Season.
  • Step 4Top nachos with tomato salsa, dollops of yoghurt and coriander. Season and sprinkle with chilli, if using. Serve with lime wedges.
